Many states in Appalachia are among the most obese in the nation. When processed mac ‘n cheese is cheaper than the real stuff, who can blame the parents. Yet there are ways to eat healthy and save if you’re willing to put in the time and effort. Here we’ll explore the alternatives and my quest to keep myself and my family healthy.

Granny Sue’s Crazy Cake
1 1/2 cups sifted all-purpose flour
3 Tbsp. cocoa
1 cup sugar
1 tsp. Baking soda
1/2 tsp. Salt
1 tsp. Vinegar
1 tsp. Vanilla extract
5 Tbsp. Vegetable oil (I use canola)
1 cup water
Sift dry ingredients into a greased 8-inch square pan. Make 3 depression in dry ingredients. Pout vinegar in one, vanilla in another, and vegetable oil in the third. Pour water over all. Mix well until smooth. Bake at 350 degrees for 35 minutes. When cool, frost.
Granny Sue’s variation: Add 1/2 package (4 1/2 oz. package) instant chocolate pudding. Top with 1/2 cup chopped nuts and 1/2 cup semi-sweet chocolate chips.
Mexican mocha variation: Change cocoa content to 3 1/2 Tbsp. Add cinnamon and chili powder to taste (about a 1/2 teaspoon each in my case). Substitute 1 cup of water and 1 cup of coffee.
